It&#8217;s also all in one pan and can even go in the airfryer. <\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Butter nut squash, peeled, seeds removed and chopped into 1-2cm cubes<\/li>\n\n\n\n<li>1 Medium onion red or white peeled and chopped into 8 pieces<\/li>\n\n\n\n<li>1 Courgette chopped into chunks<\/li>\n\n\n\n<li>1 Red, orange or yellow pepper chopped<\/li>\n\n\n\n<li>3 Cloves of garlic chopped into chunks<\/li>\n\n\n\n<li>Olive oil<\/li>\n\n\n\n<li>Salt and pepper<\/li>\n\n\n\n<li>Thyme dried 1tsp<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p>Place all chopped veg into an oven tray and add the oil, seasoning and herbs. Give it all a good mix to coat all the veg and then bake in the oven for 25-30 mins at 200 degrees C depending on your oven (adjust times for an airfryer). You are looking for the squash to be tender and colour on the vegetables, with almost all of the liquid gone.<\/p>\n\n\n\n<p>This is a fantastic side dish and lots of things can be added.
