Waffles, one of my families favourite breakfast items. I don’t make them often so they are a real treat. An easy recipe that can be customised. We like to mix it up with maple syrup, or fruit and yoghurt, or chocolate sauce as toppings.
I make big batches and keep in the fridge for a couple of days. Reheat in microwave.
Ingredients
- 2 eggs separated and egg whites whipped until doubled in size.
- 500ml of milk
- 100g of butter melted
- 500g self raising flour
- 2 tbsp of sugar
- 1/2 tsp vanilla bean paste
Method
- Heat up waffle maker
- Separate 2 eggs and whisk egg whites until doubled in size.
- Add milk, egg yolks, vanilla and melted butter to the mix and stir gently
- Sift in flour and incorperate mix.
- ladle one ladle of mix into the hot waffle maker and cook until light fluffy and golden. My machine take around 6 minutes to cook through.
