I love this veg bake, super easy and super yummy. It’s also all in one pan and can even go in the airfryer.
Ingredients:
- 1 Butter nut squash, peeled, seeds removed and chopped into 1-2cm cubes
- 1 Medium onion red or white peeled and chopped into 8 pieces
- 1 Courgette chopped into chunks
- 1 Red, orange or yellow pepper chopped
- 3 Cloves of garlic chopped into chunks
- Olive oil
- Salt and pepper
- Thyme dried 1tsp
Method
Place all chopped veg into an oven tray and add the oil, seasoning and herbs. Give it all a good mix to coat all the veg and then bake in the oven for 25-30 mins at 200 degrees C depending on your oven (adjust times for an airfryer). You are looking for the squash to be tender and colour on the vegetables, with almost all of the liquid gone.
This is a fantastic side dish and lots of things can be added. Different seasoning and veg will keep this dish interesting.
I sometimes add aubergine and smoked paprika and serve with grilled chicken and rice.
