Chilli Con Carne, Something warming and filling about this meal that I just love, a winter staple.
Easy one pot meal for the hob or slow cooker.
I will often make this in big batches and freeze in individual portions for those busy nights when I want something full of flavour but quick and easy.
Ingredients
- 700g Beef mince
- 800g Chopped tinned tomatoes
- 1 Large chopped onion
- 1 Green pepper
- 3 Cloves of garlic
- 1 Beef stock cube
- 1tsp of ground cumin
- 1-2 tsp Smoked paprika
- 1-2 tsp Hot paprika
- 1-2 tsp Garlic granules
- 2 tsp Tomato puree
- 1tsp Chilli flakes
- 1 tin of kidney beans
- 3-4 of the tomato cans worth of water.
Method:
Brown the mince then drain off the fat. tranfer to a bowl. Heat a little oil in the pan and add the chopped onions, peppers and garlic. soften these for a few minutes. Add tomato paste and stir. once this has mixed through add back the meat along with the tomatoes, stock, herbs and spices. Give this a good mix. add kidney beans and water. let this come up to a simmer then keep on low for up to an hour to reduce the sauce and concentrate the delicious flavours.
This could also be a slow cooker meal. Once the meat has browned add to the slow cooker with all the other ingredients and stir well. Only half the water would be needed for the slow cooker. Cook on low for 6-8 hours.
This meal is fantastic for batch cooking. Double or triple the ingredients then portion up into servings, store in a freezer safe container and freeze for an easy weeknight dinner.
