Tasty soup in under and hour.
Leek and Potato soup is probably one of my favorite comfort food soups. I love this soup any time of the year and I make it a little more peppery for an extra warmth.
Ingredients:
- 1KG potatoes chopped into chunks
- 700g Leeks chopped fresh or frozen
- 1 small onion, chopped
- 1 Chicken or vegetable stock cube
- 1ltr of cold water
- 200ml Milk
- 2tsp Thyme
- 1Tsp Nutmeg
- Salt and pepper to taste
- 1Tbsp oil
Method:
Add chopped leeks and onion to a deep pan with a little oil, heat gently until softened. Then add peeled and chopped potatoes and the stock cube with 1 litre of water. At this point add in the herbs, salt and pepper. Bring up to a boil then reduce to a simmer for 20-30 mins. When the potatoes are soft and the liquid reduced a little add in the milk, this can be blended up and it’s ready to serve.
